Rich dense cheesecake with homemade graham cracker crust. The recipe comes from a department store tearoom in Memphis TN that opened it's doors in 1890. The store was called Gerbers. Women would come from Arkansas, Mississippi and Kentucky to shop at Gerbers and of course eat cheesecake in the tearoom. My dear Big Mama, Lena Mozelle Payne, got a copy of the original recipe and gave it to me in 1973. Four generations of my family continue baking these delicious cheesecakes today.

The glaze was so good, we would grab a spoon and scrape up every bite. Baked in a tube pan this feeds 8 to 10.

I was born in the Arkansas Delta on the Mississippi River where southern food was the common bond among families and friends. “What’s for supper?” was one of the most important questions asked early in the day. And the bigger question was “What’s for Dessert?” And that delicious memory of a juicy peach or blackberry cobbler, layered with delicate buttery crust just makes me smile. Having a piece of warm banana nut or zucchini bread slathered with melting butter for breakfast always turned an ordinary morning into something special. My sweet mama, Sherytha Scaife, who no doubt was the original Steel Magnolia, baked these every Christmas for my teachers and they said it was one of their favorite Christmas gifts. And keeping with tradition, I passed the gift of homemade goodness to my own children’s teachers. It is traditions like these that inspire me to keep the southern custom of “homemade" alive.
